I just love Trader Joe’s Mini Sheet Cakes! They are so fun to decorate and the Strawberry with Cream Cheese frosting one is SO GOOD! It is perfect for the summer and just in time for 4th of July. There are lots of Trader Joe’s 4th of July cakes decorated with blueberries and raspberries to look like an American flag, but I thought I’d do a cute one with a red, white and blue popsicle theme!

You will need:

1 Trader Joe’s Mini Sheet Cake
Red, white and blue sprinkles
Blue and red Mike and Ike’s
Toothpicks
Can cream cheese frosting (optional)
Jumbo French star piping tip (optional)
Directions for Trader Joe’s Patriotic Popsicle Cake:
First smooth the frosting on the cake with a knife or offset spatula.

Next add some red, white and blue sprinkles on top of the cake.

I came up with this cute candy popsicle idea way back in 2012! It was so popular and I’m so happy people still use this idea today!
Now cut off the bottom end of a toothpick (about 1/2 inch) and push into the bottom of a Mike and Ike. (sometimes it’s easier to poke the bottom of the Mike and Ike with the pointy end of the toothpick first and then push the cut end of the toothpick in for the popsicle stick)
Make 12 each of the red and blue candy popsicles.

Pipe on 12 stars of the cream cheese frosting using the star tip.

Place 2 candy popsicles on top of each piped frosting star.

Place the lid back on and you’re ready to take it to a party or picnic!

Trader Joe's Patriotic Popsicle Mini Cake
Fun and easy hack for the 4th of July using Trader Joe's Mini Sheet Cakes and Mike and Ike's candies!
Ingredients
- 1 Trader Joe’s Mini Sheet Cake
- Red, white and blue sprinkles
- Blue and red Mike and Ike’s
- Toothpicks
- Can cream cheese frosting (optional)
- Jumbo star piping tip (optional)
Instructions
- First smooth the frosting on the cake with a knife or offset spatula.
- Next add some red, white and blue sprinkles on top of the cake.
