These Tea and Honey Cupcakes are so adorable and super yummy! Using your favorite black tea and a box cake mix, they couldn’t be easier to make! The cute topper is made from store-bought meringue cookies and a lot of fun to create.

You will need:
- 1 box white cake mix (I used Betty Crocker)
- 1 cup hot milk
- 4 black tea bags (your favorite kind, I use Fairmount Empress Tea, but I have also used Lipton Black Tea)
- 3 eggs
- 1/2 cup vegetable oil
- 2 Tablespoons honey
- vanilla meringue cookies (I used Trader Joe’s)
- black and pink food coloring markers
- vanilla buttercream (store bought or you can get my recipe here

- Let the tea bags steep in the hot milk for at least 1/2 hour
- Remove tea bags from milk and mix all the ingredients in a large mixing bowl with a hand mixer for 2 minutes
- Place paper cupcake liners in a muffin tin and fill 2/3 with batter.
- Bake at 350 for 12-17 minutes
- Let cool completely
- Frost each cupcake with vanilla frosting
- Make cute faces on the meringue cookies using the food markers
- Top each cupcake with a meringue cookie
