Spring Flower Cupcakes

February 23, 2017 by Party Pinching

Pretty Spring cupcakes that are so fun and easy to decorate using marshmallows and pastel colored candies! Perfect dessert for your Easter brunch, Mother’s Day celebration, baby or bridal shower! They really are very easy to make and you don’t need any decorating skills at all!  The only hard part about decorating these is not eating all of the candy.  I used mini cupcakes- they are less time consuming and you can have lots of different varieties that way.

You will need:

    • Mini cupcakes, frosted with white frosting
    • pastel M&M’s
    • mini marshmallows
    • pink, purple & yellow sprinkles
    • Necco wafers
    • pastel candy corn

  1.  Frost MINI cupcakes with white frosting. These are all mini cupcakes, if you want regular size, it will require more candy and marshmallows.
  2. For marshmallow cupcakes, cut mini marshmallows on the diagonal. Then immediately dip the cut end into sugar sprinkles. Arrange the marshmallow halves on the cupcake working from the outside in.
  3. For the M&M cupcakes, place the M&M’s in a circle around the outer rim of the cupcake and then repeat on the inside of the M&M circle until the top of the cupcake is entirely filled.
  4. For the Necco wafer cupcakes, place 7 Necco wafers around the edge of the cupcake. Then frost the bottoms of 5 more Necco wafers and place on top of the outer ones. Place an M&M in the middle.
  5. For the candy corn cupcakes, place the candy, pointy end in around the edge of the cupcake. Repeat with another circle inside the cupcake, slightly overlapping the first circle of candy corn. Place an M&M in the middle.
