This Mint Chocolate Chip ice cream pie is the perfect dessert for summer! You can really use any ice cream you wish, it’s so easy to make!
You will need:
Oreo cookie crust
2 pints Mint Chocolate chip ice cream (or your favorite flavor), softened
For the fudge topping:
1 TB butter
¼ cup plus 2 TB heavy whipping cream
2 TB light corn syrup
2 TB packed light brown sugar
2 tsp cocoa powder
1 tsp vanilla extract
2/3 cup semi-sweet chocolate chips
To decorate pie:
Whipped topping (like Cool Whip)
Mini chocolate chips
Mint leaves

DIRECTIONS for the Mint Chocolate Chip Ice Cream Pie
Scoop the ice cream into the Oreo crust and smooth. Freeze for 2-4 hours.
To make the fudge topping, place the butter, heavy cream, corn syrup, brown sugar and cocoa powder in a small saucepan.
Stir everything together over medium heat until melted and smooth.
Remove from heat and add the vanilla and chocolate chips. Stir until thoroughly melted and shiny.
Let cool for about 25 minutes, stirring every 5 minutes.
Pour topping over the pie and spread evenly on top. Freeze pie for 3 hours or overnight.
Top pie with whipped topping, mini chocolate chips and mint leaves
