These Mini Chicken and Waffles are just the perfect bite! Great for brunch, parties or for watching the game, they are made easy by using Little Debbie’s Flapjack Muffins! The mini muffins make the cutest little waffle because they already have the syrup taste baked right in! All you have to do is press them into a waffle maker and you have the perfect mini waffle in just minutes!

You will need:

1 (8.44 oz.) box of Little Debbie Flapjack Mini Muffins
2 chicken breast halves
2 cups all-purpose flour
1 TB garlic powder
1 TB onion powder
2 eggs
1 tsp smoked paprika
1 tsp cayenne pepper
Salt and pepper to taste (about 1 tsp each)
Maple syrup and chopped chives *optional
Mini waffle maker
Directions for Mini Chicken and Waffles:
First heat up the mini waffle maker and place the flapjack mini muffin in the center. Close the waffle maker and toast for about 2 minutes.

Next cut up the chicken breasts into bite size pieces. Now, mix together the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt and pepper in a dish. Whisk the 2 eggs and place in another dish. Coat the cut chicken with plain all-purpose flour first, then coat with the egg and finally coat with the seasoned flour.

Fry in batches in vegetable oil until golden brown and the chicken temperature reads 165 degrees F. Place on a wire rack to cool.

Next skewer the chicken on top of the mini waffle and drizzle with a little maple syrup on top.

Sprinkle chopped chives on top, if desired.
