You will need:
16 slices of quality white bread
2 cups sharp cheddar cheese, grated (please grate the cheese fresh it makes a difference!)
6 ounces cream cheese, very soft room temperature
½ cup real mayonnaise (use Dukes not Miracle Whip)
4 ounce jar diced pimentos (drained)
½ tsp garlic powder
½ tsp onion powder
Paprika, ground black pepper, salt and cayenne pepper (optional) to taste

Mix everything together in a medium bowl with a large wooden spoon or a hand mixer.
Cover and put in refrigerator for at least 2 hours.
Finally, spread the pimento cheese generously between two slices of quality white bread and cut on the diagonal. Now you have the perfect copycat Masters Pimento Cheese Sandwich!

If you are in a pinch you can use a pre-shredded bag of cheddar cheese, but it really does make a difference if you grate the cheese yourself!
You can also add some cayanne and chopped jalapenos for a little kick, but we prefer to stay with the classic traditional pimento cheese spread.
