These are THE BEST Gluten-free Vegan Double Chocolate Cookies ever! Actually these are THE BEST DOUBLE CHOCOLATE COOKIES EVER! These are so decadent and rich and super easy to make!

You will need:
- 1 1/4 cup blanched almond flour (I used Barney see Amazon link below)
- 1/2 cup light brown sugar, packed
- 1/2 teaspoon baking soda
- 1/3 cup DARK cocoa powder (I used Hershey’s Special Dark cocoa powder, see Amazon link below)
- 1/4 cup banana, pureed in food processor or blender
- 2 Tablespoons water (or melted organic coconut oil)
- 1/2 teaspoon vanilla extract
- 1/4 cup vegan dark chocolate chips (I used Enjoy Life, see Amazon link below)

Mix dry ingredients together in a bowl until well combined. Next add in the wet ingredients until a dough forms. Mix in chocolate chips. Taking about 2 tablespoon of dough roll into a ball and place onto a cookie sheet lined with parchment paper and flatten a little. Bake at 350 degrees for 10-12 minutes. Let cool 15 minutes.
