This Eggs Benedict Casserole is so easy to put together and it sets up overnight so all you have to do is bake it the next morning and make the easy hollandaise sauce! Perfect for a brunch, Christmas morning or anytime! It’s all the flavors of your regular eggs benedict without the fuss!

This recipe makes a 9×13 casserole. I halved the recipe in the photos for a small brunch I was having.
You will need:
For the casserole:
Cooking spray
2 cups milk or half and half
8 eggs
1/2 tsp onion powder
¼ tsp Salt
¼ tsp fresh ground black pepper
6 English muffins, cut into 1” cubes
12 ounces of Canadian Bacon or ham, chopped
Chives or green onions
Paprika
For the sauce:
1 (0.9 oz.) package of Knorr’s Hollandaise Sauce mix
1 cup milk
½ cup butter

In a medium bowl, whisk together the eggs, 2 cups of milk, the onion powder, salt and pepper, set aside.
Spray a 9×13 casserole dish with cooking spray.
Scatter ½ of the Canadian Bacon in the bottom of the dish.
Next place the cubed English muffins on top of the Canadian Bacon.
Layer the rest of the Canadian Bacon on the cubed muffins. Then pour the egg mixture on top.
Cover with plastic wrap and place in refrigerator overnight.
The next morning, uncover the dish and place on counter while preheating oven to 375 degrees.
Cover with foil and bake for 30 minutes. Uncover and bake for another 15 minutes or until a knife inserted in the center comes out clean.
To make the sauce, follow the package instructions. Pour sauce on top of the casserole and garnish with chives and paprika.
