This is one of my favorite casseroles, because it’s Thanksgiving dinner in one bite! Stuffing, turkey (or chicken) cranberries, green bean casserole and mashed potatoes all in one! You can make this easy casserole any time of year or use your Thanksgiving leftovers. It’s comfort food at it’s finest. You can easily cut this recipe in half for 2 people and use a square baking dish, which is great for a small Thanksgiving celebration.

You will need:
2 (6 oz.) boxes of Stove Top stuffing (any flavor, I prefer chicken), prepared according to box instructions.
1 cup dried cranberries
3 cups cooked chicken or turkey cut or pulled into bite size pieces
1 (10.5 oz.) can cream of chicken soup, undiluted
1 (10.5 oz.) can cream of mushroom soup, undiluted
10 oz. bag frozen cut green beans
1¼ cup milk
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 tsp ground black pepper
1 TB soy sauce
1 cup French fried onions
2 (24 oz.) containers of Bob Evan’s refrigerated original mashed potatoes, prepared according to package instructions. (or you can use homemade)
Directions for Easy Thanksgiving Dinner Casserole:
First spray a 9×13 baking dish with non-stick cooking spray. Then prepare the stuffing according to package instructions.

Add the cranberries to the stuffing and stir to combine.

Spread out the stuffing in the bottom of the dish.

Next heat up the soups and milk on the stovetop or microwave.

Now add the turkey (or chicken), the soups, milk, green beans, soy sauce and French fried onions.

Stir to combine.

Pour the mixture evenly on top of the stuffing.

Now make the mashed potatoes according to package instructions. Spread out or pipe your mashed potatoes on top of the green bean layer. I spread a thin layer on top and then piped the rest. (I forgot to take a picture of the piped mashed potatoes before I baked it!)



Bake at 350 degrees F until the top of the mashed potatoes are golden brown, about 30-40 minutes. Sprinkle the top with chives and black pepper.

This is a great casserole with all of the flavors of Thanksgiving. Pour some gravy over the top to make it extra special!

This is a great dinner any time of year. I love that it’s so easy to make and it has all of the flavors of your favorite Thanksgiving sides too!
It’s an easy Thanksgiving or Christmas dinner for 2 as well. Just cut the recipe in half and bake in a square baking dish!
