Easy Cabbage Soup is packed with lots of veggies and a little bit of bacon for taste! It’s SO GOOD and the perfect meal for a cold fall or winter day. Such a great comfort dinner, you’ll make this one on repeat!

You will need:
3 TB olive oil
5 slices of bacon cut into ½” pieces (you can even use pre-cooked to save time)
½ medium onion, chopped
3 -4 garlic cloves, pressed
1 (16 oz.) can petite cut tomatoes
½ head medium cabbage, chopped (or to save time ½ a bag of coleslaw without dressing)
4 stalks celery, chopped
1 cup frozen or fresh green beans
1 can navy beans, drained and rinsed
2 medium carrots, chopped
1 (32 oz.) carton beef broth
1 tsp dried basil
¼ c fresh parsley, minced
Fresh ground black pepper to taste
Directions for Easy Cabbage Soup:
First sauté bacon until transparent. Add minced garlic and chopped onion, carrots and celery to the bacon with olive oil. Sauté until golden, stirring occasionally.

Next add tomatoes, green beans, parsley and cabbage. Let simmer until veggies are soft.
Then add the navy beans and the beef broth. Stir in basil.

Simmer for at least an hour. I usually simmer for and hour and a half to two hours for more depth of flavor. Add fresh ground black pepper to taste.

Now you have the perfect comfort food in a bowl! You’ll love all of the veggies and the depth of flavor you will get in this easy cabbage soup. Simmer for more than an hour for even more flavor, I usually simmer for an hour and a half to 2 hours.
