This Copycat Cracker Barrel Meatloaf is probably the best meatloaf I’ve ever made! It’s super easy and so flavorful, just the ULTIMATE comfort food! Great for a weeknight family meal or a Sunday supper! And IF there are any leftovers, it’s so great the next day in sandwiches!

We don’t have a Cracker Barrel in our state where we live, but when my son went to school in Savannah, it was one of our favorite places to go! Since our son was in college then, he loved going there as well because he could get comfort food and have hearty portions too! The meatloaf was one of our favorites and we absolutely love this recipe because we think it’s even BETTER than the original!
You will need:
2 lbs. ground beef
1 ½ sleeves of Ritz crackers, finely crushed
3 eggs, lightly beaten
½ cup milk
½ green bell pepper
½ small yellow onion
4 oz. block sharp cheddar or Colby cheese
½ tsp salt
½ tsp pepper
Sauce:
½ cup ketchup
2 TB brown sugar
1 tsp yellow mustard
Directions for the Copycat Cracker Barrel Meatloaf:
Finely dice the green bell pepper and onion and grate the cheese. I have to say that this cheese, vegetable grater/slicer is hands down THE BEST kitchen gadget I have ever bought in my life. Now thouroghly combine the crushed crackers, eggs, milk, bell pepper, onion and cheese in a bowl.
Now add the ground beef to the mixture making sure you don’t overwork it.
Shape the meatloaf on a baking sheet lined with foil.
Then bake uncovered for 30 minutes at 350 degrees
While the meatloaf is in the oven, place the ketchup, mustard and brown sugar in a bowl
Next mix together the ingredients and set aside.
After the meatloaf has been baking for 30 minutes, remove from oven and brush on the sauce all over the meatloaf.
Now return the meatloaf to the oven and bake for another 40 minutes or until a meat thermometer reaches 165 degrees when placed in the middle.
