Is there anything better than cereal milk? The yummy goodness left over from eating a bowl of cereal? Now there is! Cereal Milk Berry Cupcakes! I used Special K Red Berries Cereal, but you can substitute your favorite cereal for this recipe.
You will need:
- 1 (15 1/2) oz box white cake mix (I used Betty Crocker)
- 1 cup milk (substituting this for the cup of water on the box mix)
- 1/2 cup vegetable oil
- 3 eggs
- Special K Red Berries Cereal
- vanilla buttercream frosting (you can use canned frosting or get my best buttercream recipe here)
- Soak about a cup of cereal in a small bowl in 1 cup of milk for about 15 minutes. Strain the milk and discard the soggy cereal. Now you have yummy cereal milk.
- Mix the white cake mix, cereal milk, oil and eggs according to package instructions.
- Fold in 1 cup coarsely crushed Special K Red Berries Cereal
- Line muffin tins with cupcake liners and fill each 2/3 of the way with batter.
- Bake at 350 degrees for 14-17 minutes or until a toothpick inserted in the center of a cupcake comes out clean.
- Cool completely and frost with buttercream. Sprinkle crushed cereal on top.
Now you have the yummiest Cereal Milk Berry Cupcakes ever. AND you can eat them for breakfast because, well, they’re just cereal in cake form.
