There are never any leftovers when I make this yummy Blueberry Pancake Casserole! It has a praline streusel topping that is absolutely amazing! Super easy to make the day before. Perfect for Christmas morning or an Easter brunch too!

You will need:
24 frozen pancakes (buttermilk) – 2 boxes
5 eggs
¾ cup milk
1 ¼ cup heavy cream
¼ cup sugar
1 ½ tsp vanilla
¼ tsp salt
2 cups fresh blueberries
1 TB maple pancake syrup
For streusel topping:
½ c brown sugar
½ c melted butter
1 c flour
½ c finely chopped pecans
Cut pancakes in half and poke with fork.
Grease 9×13 baking dish and place pancakes in rows, cut side down.
Mix together the eggs, milk, cream, sugar, vanilla and salt. Pour over pancakes.
Push berries in between pancakes.
Cover and refrigerated overnight.
The next day,
Mix together the streusel topping ingredients and sprinkle on top.
Bake uncovered 350 degrees for 50 minutes
