You will need:
½ c butter softened
¼ c vegetable oil
¾ c granulated sugar
3 T powdered sugar
1 egg
1 ¼ tsp vanilla
2 ½ c flour
½ tsp baking powder
¼ tsp baking soda
¼ tsp cream of tartar
For the Cookie Frosting
½ c softened butter
2 c powdered sugar
2 to 3 T heavy cream or milk
½ tsp almond extract
Pink food coloring

Preheat oven to 350 degrees.
In a medium bowl, combine the flour, baking soda, baking powder and cream of tartar. Set aside.
In a stand mixer, cream together butter and sugars until fluffy. Beat in oil.
Beat in the egg and vanilla extract.
Slowly add the dry mixture until just thoroughly combined.
Using a ¼ measuring cup, scoop the dough and roll into a ball. Place on a cookie sheet lined with parchment paper and flatten the dough.
Place 6 cookies to each pan and bake at 350 degrees for 9-10 minutes.
Cool completely.
For the frosting, cream the butter and sugar together until smooth. Add the heavy cream and almond extract. Blend until you are happy with the consistency, using more cream or sugar.
Mix in a few drops of pink food coloring or until you are happy with the color.
Spread frosting on cooled cookies and chill in refrigerator.
They are just the perfect snack for any occasion. Buttery and just a touch of almond flavor in the frosting just like the original Crumbl Pink Sugar Cookie (no almond extract in the cookie please!)
