Cute little Jimothy the Raccoon has become an internet sensation so I had to make a little cupcake to celebrate how adorable he is! Seeing that he is also in my hometown of Seattle, that makes Jimothy extra special! He was born with a short spine so he is nice and round and oh so sweet!

You will need:
Cupcake, any flavor
Green buttercream frosting
Gray fondant (or white and black fondant mixed together)
#233 grass piping tip with disposable piping bag
Candy eyes
Fondant roller
Sharp knife
Directions for Jimothy Cupcake:
First pipe the frosting on top of the cupcake.

Next roll out the gray fondant. Draw a picture of Jimothy and use it as a template to cut him out of fondant with a sharp knife. Have fun drawing your own version of Jimothy. Kids will especially love doing this! He’s pretty easy to draw, I just made a little lemon shape and added the rest. It was really fun to draw his little legs. Get creative, you can try and draw him realistically or as a cute cartoon like I did! Just have fun and use your imagination!

Let the fondant dry for several hours or overnight. Using the edible markers draw Jimothy’s face and body.

Attach the candy eyes with frosting.

Place him on top of the cupcake!

Isn’t he the sweetest? I just love seeing the cute videos of Jimothy on social media, he’s just so adorable. I love that people have embraced him for his uniqueness too!
