This Easy Cheesy Funeral Potatoes recipe will fast become a family favorite. Named after a comforting tradition of bringing this warm hug of a casserole to funerals, it’s the first thing to go at every potluck, picnic or family gathering. You will need:

1 bag (30 oz.) frozen diced hash browns, thawed overnight in the refrigerator
2 cups sour cream
1 can cream of chicken soup (undiluted)
10 TB salted butter (melted)
1 tsp salt
½ tsp pepper
1 TB dried minced onion
2 cups shredded cheddar cheese
2 cups crushed cornflakes
Chives (optional)
cheese grater (optional but you will LOVE this!)
Directions for Easy Cheesy Funeral Potatoes:
First combine the hash browns, 2 cups of sour cream, cream of chicken soup and 6 TB melted butter in a large bowl.

Now, add the cheese, salt, pepper and minced onion to the bowl and stir to combine thoroughly.
Next, spray a 9×13 baking dish with cooking spray and evenly spread the potato mixture inside the dish.

Now crush the cornflakes by placing them in a bag and using a rolling pin or your hands to crush them.

Then, mix the crushed cornflakes with the remaining 4 TB melted butter

Now, sprinkle the crushed cornflakes on top of the casserole.

Bake in a preheated oven at 350 degrees Fahrenheit uncovered for 45-50 minutes.
Finally, sprinkle top with chopped chives.
