YOU WILL NEED:

3 cups flour
1 Tb baking powder
2 eggs
1 cup granulated sugar
1/4 cup brown sugar
1 1/2 tsp vanilla
1/4 cup butter, melted
1 cup evaporated milk
1 cup chopped fresh strawberries
1/4 cup vegetable oil
2-3 Crumbled Sunbelt Bakery Soft Baked Strawberry Granola Bars
Finely crumbled freeze-dried strawberries (optional)
White icing (optional)
Directions for Strawberry Granola Sweetheart Muffins:
First, pre-heat oven to 450 degrees and line muffin pan with cupcake liners. Be sure to spray the top of the pans with cooking spray so muffin tops won’t stick.
Next, combine flour and baking powder in a large bowl.
In another mixing bowl, beat eggs, sugars, vanilla, oil, and butter. Add evaporated milk and mix until incorporated. Stir in the flour mixture, do not overmix.
Now, fold in the chopped strawberries. Spoon batter into muffin cups and fill all the way to the top.
Sprinkle top of batter with crumbled soft strawberry granola bars.
REDUCE heat 350 degrees and bake 20-30 minutes or until toothpick stuck in the center comes out clean. (Pre-heating to 450 degrees and reducing to 350 degrees will create the perfect muffin dome).
Drizzle with icing and sprinkle with crushed freeze-dried strawberries. Cut a fresh strawberry into a heart shape and place on top if desired.
