This Spicy Chicken Sheet Pan Dinner is so flavorful and is a family favorite! Just takes a few minutes to prep and then the oven does all of the delicious work. The chicken comes out perfectly tender and the roasted veggies are the best! You’ll be sure to put this one on your dinner rotation! Don’t like spicy? Simply leave out the cayenne pepper and you still have a well seasoned, flavorful dinner!

You will need:
1 lb. chicken tenderloins
4 TB olive oil
1 tsp garlic powder
1 tsp onion powder
¼ tsp cayenne pepper
1 tsp smoked paprika
1 tsp salt
¼ tsp black pepper
½ of a red onion, cut in large chunks
4 carrots, peeled, cut in chunks and halved
12 baby red or gold potatoes, halved or quartered depending on size
1 head fresh broccoli, cut into bite size florets
Directons for Spicy Chicken Sheet Pan Dinner:
Preheat oven to 400 degrees F
First, mix the garlic powder, onion powder, smoked paprika, cayenne pepper, salt and black pepper in a small dish
Place all of the vegetables in a large bowl and coat with 2TB olive oil
Next sprinkle half of the seasonings onto the vegetables and stir to coat

Now place the vegetables on a cookie sheet (you can line it with parchment paper or foil for easy cleanup)

Then coat the chicken tenderloins in the remaining olive oil and seasonings and place on the cookie sheet.

Bake for 30 minutes or until the potatoes are tender and the chicken reaches an internal temperature of 165 degrees F

This dinner is so easy to make and just takes minutes to prepare. You can subsitute your favorite veggies too! Try sweet potatoes instead of baby red potatoes, or cauliflower instead of broccoli. Zucchini chunks instead of carrots or red and green bell peppers would be great too! Whole mushrooms is another great substitution. Also if you don’t like spicy, simply leave out the cayenne pepper.
