All I can say about these Smothered Pork Chops is OH. MY. GOODNESS. And I do mean GOODNESS. I’m not a pork chop fan usually but let me tell you these are SO AMAZING. And the GRAVY. You will need:
6 thin pork chops
1 TB butter
1 TB olive oil
Salt & Pepper to taste
To make the gravy you’ll need:
10-12 large whole cloves of garlic, peeled
1 TB butter
2/3 cup chicken broth
1 tsp fresh lemon juice
¾ cup heavy whipping cream
1 TB corn starch
1 TB cold water

Directions for Smothered Pork Chops
Peel 10-12 large whole cloves of garlic, set aside
Salt and pepper both sides of the pork chops
Add butter and olive oil in a large skillet over medium high heat. Add pork chops.
Sear pork chops about 3 minutes each side and remove to a plate.
To make the gravy, reduce heat to medium and add 1 TB butter to the same pan.
Add the whole garlic, stir and brown the garlic for about 3 minutes.
Add the chicken broth and the lemon juice
Next add the heavy cream and heat to a simmer.
Make a corn starch slurry by mixing together the cornstarch and water in a little bowl. Add to the pan and whisk thoroughly.
Add the pork chops back in the pan and cover and cook for 3 – 5 minutes until the pork chops are done and reach a temperature of 145 degrees F
