This Slow Cooker Tuscan Chicken aka “Marry Me Chicken” is a great comfort food dinner. Super easy to make, your family will love it! It will definitely be put on the meal rotation for sure! 2 lb boneless, skinless chicken breasts or thighs
½ cup sundried tomatoes, sliced and drained
1 (15.25 oz.) can chicken broth
2 cups heavy whipping cream
1 tsp Italian seasonings
1 tsp red chili flakes
½ tsp freshly ground black pepper
1 cup finely ground parmesan cheese (I used fresh)
3 garlic cloves, pressed
½ cup chopped onion
3 cups fresh spinach
Cooked angel hair pasta

DIRECTIONS FOR SLOW COOKER TUSCAN CHICKEN
First, sprinkle a little black pepper and Italian seasonings on the chicken. Then in a large frying pan, brown the chicken, 3 minutes each side in cooking oil. (this is optional)
Next, place the chopped onion in the crock pot. Now add the chicken on top of the onions. Then pour in the chicken broth, pressed garlic, Italian seasonings, chili flakes, sun dried tomatoes and pepper in the slow cooker and stir a little to combine.
Now cover and cook 3-5 hours on high or 6-8 hours on low
Then, uncover and remove the chicken. Slowly whisk in heavy cream and cheese so it doesn’t curdle. Return chicken to the crockpot and turn on HIGH if it isn’t already. Cover and cook for 1 more hour. If you want a thicker sauce, remove chicken and add 1 – 2 Tablespoons of cornstarch with a little water and whisk.**
Finally, add spinach and stir until wilted. Serve over angel hair pasta.
** STOVETOP SAUCE METHOD – after cooking chicken in the slow cooker on low for 3-5 hours or on high for 6-8 hours, remove chicken and place on plate. Pour the slow cooker juices into a large pan. Place on stovetop on medium high heat and slowly whisk in heavy cream and cheese so it doesn’t curdle. If you want a thicker sauce, add 1-2 Tablespoons of cornstarch with a little water and whisk. Add the spinach and stir until wilted, finally add the chicken in the pan and serve over angel hair pasta.
