You will need:
1 ½ – 2 lbs boneless, skinless chicken breast
1 ¼ cup chicken broth
½ tsp dried basil
½ tsp dried oregano
5 cloves garlic, pressed
½ chopped onion
Zest of 1 large lemon
Juice of 1 ½ lemons
1 cup heavy cream
2 Tbs cornstarch
2 Tbs water
Ground pepper
Tb butter on each chicken breast

Directions:
Sprinkle a little salt and black pepper on the chicken. In a large frying pan, brown the chicken, 3 minutes each side in cooking oil. (this is optional)
Next, place the chopped onion in the crock pot. Now add the chicken on top of the onions. Then pour in the chicken broth and add in the pressed garlic, basil, oregano, lemon zest and lemon juice. Place 1 Tablespoon of butter on top of each chicken breast.
Now, cover and cook 3-4 hours on high or 6-7 hours on low
Uncover and remove the chicken. Then slowly whisk in heavy cream so it doesn’t curdle. Now return chicken to the crockpot and turn on HIGH if it isn’t already. Next, cover and cook for 1 more hour. If you want a thicker sauce, remove chicken, mix and add 1 – 2 Tablespoons of cornstarch 1-2 tablespoons water and whisk and pour into crock pot. Now, add chicken back in.**
Finally, serve over pasta, rice or mashed potatoes.
** STOVETOP SAUCE METHOD – after cooking chicken in the slow cooker on low for 4-5 hours or on high for 6-8 hours, remove chicken and place on plate. Pour the slow cooker juices into a large pan. Place on stovetop on medium high heat and slowly whisk in heavy cream so it doesn’t curdle. If you want a thicker sauce, add 1-2 Tablespoons of cornstarch with a little water and whisk. Finally add the chicken in the pan and serve over pasta, rice or mashed potatoes.
