This Slow Cooker Chicken Gnocchi Soup tastes just like Olive Garden’s famous Chicken Gnocchi Soup! It’s so easy to make, just takes a few minutes and then simmers in the slow cooker for an easy, comforting meal! Serve with fresh baked store-bought garlic breadsticks, and it’s the perfect meal for a chilly day. You’ll be sure to put this easy family dinner idea on rotation!

You will need:
1 ½ – 2 lbs. chicken breast
3 ½ cups chicken broth
3 cloves garlic
1 (16oz.) package gnocchi (shelf stable found in pasta aisle)
½ tsp dried basil
¼ tsp dried oregano
¼ tsp ground nutmeg (don’t skip this ingredient, it just makes the soup!)
1 ½ cup Half & Half
2 carrots, grated
½ yellow onion, chopped
2 celery, sliced
1 cup chopped fresh spinach
Directions for Slow Cooker Chicken Gnocchi Soup:
First place the chicken in the bottom of the slow cooker and sprinkle with the basil and oregano.
Next, dice the onion, slice the celery, mince the garlic and grate the carrots
So I NEED to tell you about this grater I purchased from Amazon. It is HANDS DOWN my favorite kitchen gadget. In fact I don’t know how I survived all these years without it. I can literally grate a block of cheese in SECONDS. Not only that, you can switch out the blade and use it to slice zucchini, squash, potatoes for potato chips. I LOVE IT. Next place the onion, celery, garlic and carrots on top of the chicken
Then mix together the chicken broth and nutmeg in a and pour over the chicken in the crockpot
Cook on high for 4 hours
Remove chicken and shred
Now return the chicken to the slow cooker and add the Half and Half and gnocchi
Cook for another hour on high (You may add a cornstarch slurry of 1½ TB cornstarch mixed with 1½ TB Half and Half at this time if you want a thicker soup – mix well or it will clump and be grainy. Or my favorite method is just to pour into a large pot at the end and thicken on the stovetop)
Chop the spinach
Add spinach until it wilts right before serving
