This is my favorite recipe for the holdiays too and with the addition of candied almonds and dried cranberries, it makes it extra festive. It’s a quick and easy salad that only takes minutes to make and is so refreshing on a warm summer’s day! You can eat it as a side and pair it will grilled chicken, salmon or steak. Or top it with sliced chicken, grilled steak or shrimp to make it a main dish meal!
You will need:
6 cups mixed salad greens
1/3 cup fresh raspberries
1 (15 oz.) can Mandrin oranges, drained
½ red onion, sliced
Feta cheese crumbles
Directions for Raspberry Mandarin Orange Salad:
Place all salad ingredients in a large bowl.
Drizzle with however much homemade raspberry vinaigrette you like and toss.
