You will need:
2 cups cooked chicken, diced or shredded
¼ yellow onion, diced
1 (10.5 oz.) cream of chicken soup, undiluted
1 ¼ cup milk or coconut milk
2 tsp curry powder
TB canola oil

Directions for Quick Chicken Curry:
Sauté onion in canola oil in large frying pan
Add milk and cream of chicken soup and stir until combined
Add the curry powder and mix thoroughly.
Next add the cooked chicken and heat through. Serve over rice.

Use leftover rotisserie chicken for an even easier version. I love how it tastes with coconut milk, but you can even use regular milk too.
