These muffins are so moist and packed with plump golden raisins! The pumpkin pie spice granola topping is SO GOOD!

You will need:

2 Sunbelt Bakery Pumpkin Spice Chewy Granola Bars
1 cup all-purpose flour
½ cup granulated sugar
¼ cup packed light brown sugar
½ tsp baking soda
1 tsp baking powder
1 tsp pumpkin pie spice
¼ tsp salt
1 egg
½ cup vegetable oil
¾ cup canned pumpkin puree (not pumpkin pie filling)
1/2 cup golden raisins
regular size muffin tin & paper liners
Directions for Best Pumpkin Muffins with Golden Raisins:
Preheat oven to 350 degrees F
First, in a medium bowl, place the flour, baking soda, baking powder, salt and pumpkin pie spice and whisk the dry ingredients to combine.

Next add the sugars, egg, oil and pumpkin puree to a large bowl

Then, fold the dry ingredients and the raisins into the wet ingredients until just combined.


Place paper liners in the muffin tin and fill each 3/4 of the way full with batter

Now chop up 2 of the Sunbelt Baker Pumpkin Spice Chewy Granola Bars into small pieces. (If you can’t find these, use regular granola bars and sprinkle with 1/2 tsp pumpkin pie spice

Crumble the pieces with your fingers and sprinkle on top of the batter.
Bake 20-24 minutes or until a toothpick inserted in the middle of the muffins comes out clean.
