This is honestly the best pumpkin bread I’ve ever made. It comes together in just a few minutes and it has the best granola streusel that I’ve ever tasted! Super simple, just chop up a couple of Sunbelt Bakery Pumpkin Spice chewy granola bars, and crumble on top! Everyone will ask for this recipe over and over again!
You will need:
2 Sunbelt Bakery Pumpkin Spice Chewy Granola Bars
1 cup all-purpose flour
½ cup granulated sugar
¼ cup packed light brown sugar
½ tsp baking soda
1 tsp baking powder
1 tsp pumpkin pie spice
¼ tsp salt
1 egg
½ cup vegetable oil
¾ cup canned pumpkin puree (not pumpkin pie filling)
Parchment paper
Cooking spray
*optional icing drizzle :
1 cup powdered sugar
2-4 TB milk or heavy cream
¼ tsp vanilla extract
Directions for Pumpkin Bread:
Preheat oven to 350 degrees F
First, in a medium bowl, place the flour, baking soda, baking powder, salt and pumpkin pie spice and whisk the dry ingredients to combine.
Next add the sugars, egg, oil and pumpkin puree to a large bowl
Mix the wet ingredients with a spoon.
Then, fold the dry ingredients into the wet ingredients until just combined, batter may be lumpy
Spray a 8 ¾ x 5 ¼ “ loaf pan with cooking spray and line with parchment paper for easy removal and spread the batter in the pan.
Now chop up 2 of the Sunbelt Baker Pumpkin Spice Chewy Granola Bars into small pieces.
Crumble the pieces with your fingers and sprinkle on top of the batter.
Bake 50 to 60 minutes or until a toothpick inserted in the middle of the bread comes out clean.
To make the icing drizzle, mix together 1 cup powdered sugar and 2-4 TB milk or heavy cream and vanilla extract.
Drizzle icing on top with a spoon or piping bag if desired.
Now you have the BEST PUMPKIN BREAD EVER! Try adding a 1/2 cup of golden raisins to the batter, it’s so good!
