MY AMAZON PICKS (affiliate links):
First, preheat oven to 350 degrees and line a muffin pan with cupcake wrappers. Combine dry ingredients in a large mixing bowl. Next, add milk, vanilla, oil, and eggs, and beat with mixer for 2 minutes. Then, stir in boiling water, batter will be very thin. Fill cups with batter – about 2/3 full and bake for 22 – 28 minutes. Cool completely.
Next, for the frosting, beat together softened butter and cocoa until combined completely. Add powdered sugar and milk a little at a time while beating with mixer. Add another teaspoon of milk – if needed. Mix in vanilla.
For the trees, line the pretzels on a cookie sheet lined with parchment paper. Melt green candy coating according to package instructions.
Place melted candy coating into a disposable piping bag and cut off a small amount of the tip.
Start drizzling the melted candy on top of the pretzel sticks. Start about 1/2 way up each stick so that it resembles a tree.
Sprinkle green sugar sprinkles on top of the tree before they dry.
Frost each cupcake with a 1M piping tip and top with a pretzel tree.
