These Pond Cupcakes were so fun to make! When I was contacted by Roxanne of “Everything About Hallmark” about doing a recipe for the hit series “The Way Home” on the Hallmark Channel, I was SO EXCITED! “The Way Home” is one of my all-time favorite series and if you haven’t seen it yet, just drop everything and binge watch it and you’ll thank me later!

I came up with THE BEST HONEY CUPCAKE RECIPE to honor the character Del in the series! They turned out SO GOOD! I used a local orange blossom honey with just a hint of almond extract and they turned out absolutely delicious!
Check out the bracelet on top of the lily pad! I just had to!
You will need:
For the cupcakes:
1 (14.25 oz.) box of white cake mix
½ cup vegetable oil
3 eggs
1 cup water
¼ cup honey
½ tsp almond extract
Muffin tins
For the frosting:
1 cup butter softened
¼ cup honey
1 tsp vanilla extract
4 cups powdered sugar
4 TB heavy cream
Blue food coloring
1 disposable piping bag

For the decorations:
Green fondant
White fondant
Pink fondant (optional)
White frosting
Small round fondant cutters or piping tips
Small flower fondant plungers (click here to purchase on Amazon – affiliate links)
Yellow Non-pareil sprinkles
Tootsie rolls
Angel hair pasta or spaghetti (uncooked)
Parchment paper

For the Pond Cupcakes decorations, it is best to make these the night before.
First, roll out the green fondant
Then cut the fondant in strips to look like tall grass with a pizza cutter or knife. Curl some strips and place on their side on parchment paper. Set aside to dry overnight.
Next, cut out small circles with a piping tip or small round cookie cutter.
Cut a little slice out of the circle. With a toothpick, make some indentations in the lily pad. Set aside on parchment paper to dry overnight.
Now roll out white (and pink if desired) fondant and cut out small and large flowers with the fondant plungers.
Curl up the petals and attach some small flowers in the center of the large flowers with white frosting. Place a little frosting in the center of each flower and sprinkle with the yellow non-pareil sprinkles. Let dry overnight.
For the cattails, place a Tootsie Roll in the microwave for about 5 seconds until soft. Take a small amount of the soft Tootsie Roll and roll into the cattail shape.
Push the Tootsie Roll cattail into the end of the uncooked angel hair pasta or spaghetti.
After the fondant has dried overnight, using a food safe paint brush, paint on the heart bracelet with edible silver paint if desired. Let dry.
Directions for the honey almond cupcakes:
Mix all of the cupcake ingredients together along with the honey and almond extract according to package instructions.
Line the muffin tin with cupcake liners and fill 2/3 of the way full with batter.
Bake cupcakes at 350 degrees F according to package instructions, about 13-15 minutes or until toothpick comes out clean when stuck in the middle of a cupcake. Let cool completely.
Directions for the honey frosting:
For the frosting, cream the butter with stand mixer until fluffy. Beat in the powdered sugar a little at a time until fluffy and completely incorporated. Mix in the honey and the vanilla.
Add in the heavy cream and food coloring and beat until fluffy and smooth, about 3 minutes.
Place frosting into the disposable piping bag fitted with the 1M piping tip and pipe frosting on top of each cupcake.
To decorate the cupcake, attach a large flower to the large lily pad with white frosting.
Place on top of the cupcake.
Next place the long reeds in the frosting in the back of the cupcake.
Next place the cattails in the back of the cupcake with the reeds
Now place a small lily pad and water lillies on top of the cupcake
