This is the most perfect plum cake! My sister has an Italian plum tree and she begged me to come over and take some. This cake is SO EASY to make and my husband devoured it and he doesn’t even like plums! It’s my version of the famous New York Times Plum Cake recipe and let me tell you it’s one of the best cakes ever!

You will need:
6 plums, halved and pitted
½ cup salted butter softened at room temperature
¼ cup brown sugar
½ cup granulated sugar
2 eggs
1 cup all-purpose flour
1 tsp baking powder
½ tsp vanilla extract
1 TB fresh lemon juice
Cinnamon sugar (1/2 TB sugar plus ½ tsp ground cinnamon)
Powdered sugar, whipped cream or vanilla ice cream for topping
8″x 8″ baking dish or 9″ springform pan

Directions for Perfect Plum Cake:
Using a hand mixer, beat the softened butter, brown sugar and granulated sugar together. Add the eggs and beat until thoroughly combined.
Next add the flour, baking powder and vanilla. Mix until just combined.
Line a 8”x8” baking dish with parchment paper and spray with non-stick spray. Place batter in pan and smooth the batter evenly with a spatula.
Cut the plums in half lengthwise and remove the pits.
Press the halved plums cut side down into the batter.
Squeeze about a tablespoon of fresh lemon juice on top
Sprinkle top with the cinnamon sugar mixture.
Bake at 375 for 45 – 50 minutes until a toothpick comes out clean
