These Oreo Cheesecake Bars are no-bake, easy to make AND Gluten-free! Everyone loves this yummy dessert, it’s a family favorite great dessert for after dinner or for any occasion! Gluten-free Oreos make up the crust to this super easy dessert and if you’ve never tried gluten-free Oreos before, let me tell you, they are wonderful!

You will need:
24 Gluten free Oreos
4 TB melted butter
1 cup (8oz) semi-sweet chocolate chips
16 oz. (large tub) Cool Whip, thawed
8 oz. cream cheese, softened to room temperature
1/2 cup powdered sugar
1 tsp vanilla extract

Directions for Gluten-free Oreo Cheesecake Bars:
In a food processor, crush Oreos to a fine crumb and combine with melted butter.
Generously spray an 8×8 dish with non-stick cooking spray.
Pour Oreo crumb & butter mixture into bottom of prepared dish pressing evenly and firmly. Refrigerate until ready for use.
In a large microwave safe mixing bowl pour chocolate chips in and microwave for 30 seconds. Stir and place back in microwave for 15 seconds and stir. Do this step until chocolate chips are smooth. Set aside to cool.
In a separate mixing bowl, cream cheese with an electric hand mixer until smooth. Then beat in the powdered sugar, vanilla and chocolate.
Fold in about 12 ounces of the Cool Whip reserving the rest.
Remove crust from refrigerator and smooth the chocolate cream cheese evenly.
Spread remaining Cool Whip on top of the cream cheese layer and sprinkle more Oreos crumbs on top for garnish.
Refrigerate for at least 2 hours to set.
This no-bake gluten-free Oreo Cheesecake bars recipe would be great as a pie too, double the filling in the recipe and fold some coarsely crushed gluten-free Oreos in, then put it in a springform pan with the crust and you have a yummy cheesecake!
