These mini strawberry shortcake pound cakes are so elegant and great for parties. They are just the perfect bite of Drake’s Cakes Mini Pound Cakes, whipping cream and strawberries. They are individually portioned, but it’s impossible to have just one!

These dainty little cakes are perfect for parties, weddings, picnics, potlucks, baby or bridal showers or for the 4th of July! Try other fruits like peaches or raspberries too. Make a lot though, people will want more than one!

You will need:
2 (10 oz.) boxes of Drake’s Mini Pound Cakes
1 pint strawberries
8 oz. frozen whipped topping, thawed (or homemade whipped cream)
2 ½ inch biscuit cutter or cookie cutter
Jumbo open star piping tip and piping bag
Directions for Mini Strawberry Shortcake Pound Cakes:
Using the biscuit cutter, cut out the biscuit shapes out of the Mini Pound Cakes

Now slice each cake in half horizontally.

Pipe the whipped topping on the bottom cake.

Next slice the strawberries horizontally in ¼ inch slices.

Place the strawberry slice on top of the piped whipped topping.

Next place the top of the pound cake on top of the strawberry.

Finally pipe the top of the pound cake with more whipping cream and garnish with a strawberry cut in half.

Easy and elegant mini strawberry shortcake pound cakes using Drake's cakes mini pound cakes!
Ingredients
- 2 (10 oz.) boxes of Drake’s Mini Pound Cakes
- 1 pint strawberries
- 8 oz. frozen whipped topping, thawed (or homemade whipped cream)
- 2 ½ inch biscuit cutter or cookie cutter

Instructions
