These Mini Caramel Apple Cakes are so petite and adorably sweet! Made with Drake’s Cakes Coffee Cake Mini Cake Bites, they are the the cutest no-bake dessert for fall!

You will need:
1 box Drake’s Cakes Coffee Cake Mini Cake Bites
½ cup room temperature salted sweet cream butter
1 tsp milk
1/8 tsp vanilla extract
2 1/4 cups powdered sugar
1 drop of electric neon green gel food coloring
Lime green sanding sugar sprinkles
1 cup prepared caramel dip (can be found in your grocery store’s produce section or on Amazon here)
½ cup finely chopped nuts
Directions for Mini Caramel Apple Cakes:
With a hand mixer, whip the butter, milk, vanilla and prepared spiced apple cider for about 30 seconds until smooth.
Slowly add in the powdered sugar while mixing.
Fold in the green food coloring
Place buttercream frosting in the refrigerator for 2 hours or overnight to set.
Scoop the frosting with a small cookie scoop and place on top of the mini cakes.
Sprinkle the green sanding sugar on top
Using a small knife or a piping bag, pipe the caramel dip around the bottom of the frosting scoop.
Sprinkle the chopped nuts on the piped caramel.
Cut the wooden sticks to the desired size
Place the wooden stick in the center of the frosting scoop.

Mini Caramel Apple Cakes
Adorable no-bake mini caramel apple cakes using Drake's Coffee Cake Mini Cake Bites!
Ingredients
- 1 box Drake’s Cakes Coffee Cake Mini Cake Bites
- ½ cup room temperature salted sweet cream butter
- 1/8 tsp vanilla extract
- 1 tsp milk
- 1 TB prepared spiced hot apple cider, cooled to room temperature (I used a spice apple cider mix and followed the directions on the package)
- 2 1/4 cups powdered sugar
- 1 drop of electric neon green gel food coloring
- 1 cup prepared caramel dip (can be found in your grocery store’s produce section)
- ½ cup finely chopped nuts
- Wooden stir sticks
Instructions
- With a hand mixer, whip the butter, vanilla, milk and prepared apple cider for about 30 seconds until smooth.
- Slowly add in the powdered sugar while mixing. Mix for about 1 minute while adding in the milk.
- Fold in the green food coloring
- Place buttercream frosting in the refrigerator for 2 hours or overnight to set.
- Scoop the frosting with a small cookie scoop and place on top of the mini cakes.
- Sprinkle the green sanding sugar on top
- Using a small knife or a piping bag, pipe the caramel dip around the bottom of the frosting scoop.
