The Iconic Peach Ice Cream Sandwiches are a must for any Masters watch party, so I made some Masters Mini Peach Ice Cream Sandwiches and wow, were they a hit! They are just the perfect bite-size treat for watching the tournament. I recommend making a double batch because these disappeared fast!

You will need:

1 (11.2 oz.) package of Keebler’s Classic Sandies Shortbread Cookies
1 (48 oz.) container of Peach Ice Cream (I used Tillamook Peaches and Cream)
2″ Round biscuit cutter
Directions for Masters Mini Peach Ice Cream Sandwiches:
First open the ice cream container and peel off the sides and bottom.
Then place the ice cream horizontally on a cutting board and slice the frozen ice cream into half inch rounds.
Now working quickly, use the biscuit cutter to cut the ice cream into round shapes.

Next, place the cut ice cream immediately in between 2 cookies

Finally, wrap with cellophane wrap and place in freezer until ready to enjoy.
** If you prefer, you can also soften the ice cream and spread it a half on a large cookie sheet lined with parchment paper and refreeze until hard. Then using the biscuit cutter, cut the circles out of the ice cream to get more small discs of ice cream for the sandwiches.

Now you have the sweetest little treat for your Masters Tournament Watch Party! These Masters Mini Peach Ice Cream Sandwiches will go fast! I wish I had made a double batch because everyone loved them so much. I will for sure make a double or even triple batch next year. These are actually great any time of year for a great summer treat too – it’s easy to change out the ice cream for any flavor.

Just like the ones at Augusta National, these mini versions of the Masters Peach Ice Cream Sandwiches are perfect for your Ultimate Masters Watch Party!
Ingredients
