These maple pancake cupcakes are SO GOOD! They taste just like pancakes and using real maple syrup (not pancake syrup) makes them extra special! Place mini pancakes from the freezer section at the grocery store (or make your own) on top and it’s the perfect decoration!

For the Maple Pancake Cupcakes, you will need:
1 tsp baking powder
1½ cup all-purpose flour
½ cup butter, melted
1¼ cup granulated sugar
3 eggs
1 tsp vanilla
¼ cup pure maple syrup (not pancake syrup)
¼ cup sour cream
1/3 cup milk
15 store bought – mini frozen pancakes, thawed completely
1 1/2-inch Snowflake stencil
Powdered sugar for dusting
For the frosting:
½ cup softened butter
1½ tsp vanilla extract
1½Tb pure maple syrup
2½ cups powdered sugar
2 Tb heavy cream
1 disposable piping bag
1 jumbo open star piping tip
sifter to dust powdered sugar over stencil

DIRECTIONS:
First, in a medium bowl, whisk together the flour, baking powder and salt. Set aside.
Second, in a large mixing bowl, beat together the granulated sugar and sour cream. Add the butter, eggs, and maple syrup. Beat in eggs one at a time. Mix in the vanilla. Gradually add the flour mixture and milk alternately and stir until combined.
Third, line a muffin pan with cupcake wrappers and fill cupcake liners about 2/3 full. Bake at 350 degrees for 20 minutes. Cool completely.
FOR THE FROSTING
First, cream butter with mixer until fluffy. Beat in powdered sugar a little at a time until fluffy and completely incorporated.
Second, mix in vanilla and maple syrup. Add in the heavy cream and beat in until fluffy and smooth, about 3 minutes.
Finally, place the frosting into the disposable piping bag fitted with the jumbo open star tip. Swirl frosting on top of each cupcake.
Now, to decorate:
With a paper towel, lightly pat the top of each pancake to get rid of any moisture. Place the snowflake stencil over the pancake and using the sifter, dust powdered sugar over it. Lift the stencil straight up for a clean snowflake design. Place pancake on top of cupcake.
