You will need:
6 white or Yukon gold potatoes, halved (not russet – they become too mushy)
4 hard boiled eggs, chopped
2 stalks of celery, diced
¼ cup onion, diced
¾ cup – 1 cup Miracle Whip
2 TB pickle relish
1 ½ tsp yellow mustard
Paprika
Chives

Place potatoes in a pan of cold water covering the potatoes. Bring potatoes to a boil and cook for 15-20 minutes or until fork tender.
Remove the potatoes from the water and peel the skin. Let cool completely then cut into ½ “ cubes
In a small bowl combine the Miracle Whip, relish and mustard.
Put the potatoes, onion, eggs and celery in a large bowl. Pour the dressing on top and mix with spatula until thoroughly combined. Garnish with paprika & chives and sliced hard boiled eggs if desired

Mama's best Classic Potato Salad is what everyone wants and expects at every picnic! So comforting and easy to make, it brings back great childhood memories of mom and grandma!
