Using just a few ingredients, this is the perfect side to your Thanksgiving dinner or any holiday celebration. It was always my absolute favorite side dish and my mom had a secret ingredient that made it so good – orange juice!
We prefer the sweet potatoes in large pieces, not mashed, but feel free to mash or whip them if you wish.
You will need:
2 (29 oz.) cans cut Sweet Potatoes, drained
½ cup orange juice
1 tsp brown sugar
pinch of salt
about ½ cup mini marshmallows
Directions for Grandma’s Sweet Potato Casserole:
First, open the cans of sweet potatoes and drain. Next, place the cut sweet potatoes in a 2 quart baking dish that is also microwave safe
Now, mix together the orange juice, brown sugar and a pinch of salt in a small bowl.
Pour the juice mixture over the sweet potatoes and carefully toss to coat. Then microwave the sweet potatoes on high for 2 minutes and stir. Then microwave 3 more minutes or until hot.
Remove from microwave and sprinkle marshmallows on top. You can cover the top of the casserole entirely with the marshmallows or just sprinkle a few on top.
Finally place in the oven and broil. Watch carefully! The marshmallows toast up fast!
Now you have the best sweet potato casserole! We all love this yummy side dish for every holiday!
