Easy Mini Graham Cracker Gingerbread Houses! These mini houses are so easy to make using things you can pick up from the Dollar Tree or you probably have most of these supplies in your pantry! A super fun project for the kids to make on a snow day or anytime!

Making gingerbread houses right after Thanksgiving dinner was a tradition I started long ago. My kids, nieces and nephews just loved this activity while the adults were cleaning, watching football or in a turkey coma.
But lately I have been noticing all of the gingerbread house kits at the store are so expensive. So I decided to go old school this year, back to my room mom days and make some mini gingerbread houses out of graham crackers like my boys used to when they were in grade school. The candy was easy to pick up at the Dollar Tree
You will need:
Graham Crackers
Betty Crocker Cookie Icing or Royal Icing (my recipe here)
Assorted candies and sprinkles
Serrated knife

Using a sawing motion with the serrated knife, cut 2 full graham crackers so they have a point on the top like a roof peak.
Next cut 2 large graham crackers in half so you have 4 squares, 2 for the sides of the house and 2 for the roof.
Then pipe a line of icing on the side of a pointed graham cracker. Attach a square graham cracker for the side of the house.
Repeat until you have the house base structure and wait a little to dry.
Now once the base is stable, attach the roof with icing. It’s best to let this dry for several hours or overnight until you decorate them.
Finally decorate with candy and icing! Use you imagination, it’s so much fun!
*here’s an easy hack: if you are not going to munch on the house, use a glue gun to assemble instead of the icing!
