These Gluten-Free Vegan Peanut Butter Chocolate Chip Cookies are THE ULTIMATE! I mean they are so rich and gooey and wonderful, AND they are Gluten-free and Vegan! I recently was told I had an allergy to cow’s milk, eggs and wheat. Pretty much a baker’s nightmare, but I was completely motivated to try to create something sweet that I could eat – and you know what? THESE COOKIES ARE SO AMAZING!

You will need:
- 1 1/4 cup almond flour (I use Barney’s)
- 1/2 cup light brown sugar
- 1/2 tsp baking soda
- 1 tsp vanilla extract
- 1/2 cup creamy vegan peanut butter
- 1/4 cup vegan chocolate chips (I use Enjoy Life brand)
- 1 1/2 Tablespoons water

Mix the dry ingredients together.
Next add the peanut butter, vanilla and water. I used a spoon to mix everthing together thoroughly. Then stir in the chocolate chips.
Now, take about 2 Tablespoons of dough and roll into a ball, then flatten it a little. Finally, place on cookie sheet and bake for 11-13 minutes at 350 degrees.
Now you have the BEST Gluten-free vegan peanut butter chocolate chip cookies ever!
They are great re-heated in the microwave for about 10 seconds too! Yum!
