These Peanut Butter Brownie Cookies are my family’s FAVORITE COOKIES! They are so easy to make using a store-bought brownie mix! You’ll love how fast these come together and it’s a crowd pleaser for sure. Perfect for parties, potlucks, game day or as an afternoon snack. They are perfectly chewy on the outside and gooey on the inside and are so so good.

These easy Peanut Butter Brownie Cookies are so great just out of the oven, or just microwave them for a few seconds and they are the best ooey gooey cookie with a chewy outside. Like a little peanut butter molten chocolate cookie! Pure Heaven with a cold glass of milk, these will fast become a family favorite just using a few ingredients! I love using the box of brownie mix too for an even easier recipe!
You will need:

1 (18.4 oz.) box Pillsbury Dark Chocolate Brownie Mix
½ cup all-purpose flour
1/3 cup vegetable oil
2 eggs
1 tsp vanilla extract
½ tsp kosher salt
1 cup peanut butter chips
Directions for Easy Peanut Butter Brownie Cookies
First preheat oven to 350 degrees.
Next in a medium bowl empty the box of brownie mix.

Then mix together the dry brownie mix, flour and salt.

Now add the oil, eggs, and vanilla extract.

Mix until just combined. Batter will be very thick. (you can use a hand mixer or mix by hand).

Then fold in the peanut butter chips.

Refrigerate for about 15-30 minutes for easy rolling if desired.

Roll into 1-2” balls and place on a cookie sheet lined with parchment paper.

Bake for 10 minutes.

Makes 28 cookies
