2 (15 oz.) cans peach halves in heavy syrup
3 cups fresh raspberries
1/4 cup powdered sugar
1 TB lemon juice
Vanilla ice cream
Mint leaves
Fresh raspberries for garnish

Directions for Easy Peach Melba:
Drain the heavy syrup from the 2 cans of peach halves and reserve 1/4 cup peach syrup.
For sauce, add the reserved 1/4 cup peach syrup, powdered sugar, 3 cups fresh raspberries, and lemon juice into a blender.
Blend until smooth. strain out raspberry seeds using a fine sieve.
Put one peach half in a small bowl with a scoop of vanilla ice cream.
Top with the sauce, fresh raspberries, and mint.
