You will need:
5 eggs
12 oz. breakfast sausage ( I use Johnsonville original) but you can substitute cooked bacon or cooked ham
28 oz. bag frozen O’Brien style hash brown potatoes
Diced onion, red and green bell pepper (optional if you want more in your skillet)
1 cup sliced mushrooms
3 cups fresh spinach
Grated cheddar cheese
Sliced green onions and parsley if desired
Directions for Super Easy Loaded Breakfast Skillet:
First cook the breakfast sausage according to package instructions. Remove from pan.
Wipe out pan and cook the frozen hash browns according to package instructions.
Add the diced onion, red and green bell pepper if you want more than what is in the package.
Next add the sliced mushrooms and cook until the potatoes are done.
Now, add the spinach and sauté until wilted.
Then slice the sausage into bite size pieces and add the sausage back in the pan.
Whisk the eggs in a small bowl and add to the pan. Stir and cook until the eggs are done.
Top with cheddar cheese and heat until melted.
