My sister came up with this copycat version of a classic Easy Broadway Pea Salad that we loved at our local restaurant. It’s so simple but everyone just raves about it. It’s the first salad to disappear at every holiday or family get togethers and potlucks! You’ll love how refreshing it is and how simple it is to make! Great for any time of year.

You will need:
16 oz. bag Petite frozen peas, thawed but not cooked
¼ cup mayonnaise
¼ cup sour cream
4 pieces of bacon, cooked crisp and crumbled or chopped into small pieces
½ of a (8 oz.) can sliced water chestnuts
1/3 of a red onion, diced
½ cup fresh snow pea pods
Salt and white or black pepper to taste

Directions for Easy Broadway Pea Salad:
First place peas in a food colander or strainer and run under cold water until thawed. Let dry on paper towels to absorb the moisture.
Next, in a small bowl, combine the mayonnaise and sour cream, set aside
Now place peas in a medium bowl along with the fresh snow peas and cooked crumbled bacon
Then finely dice the red onion and water chestnuts and add to the bowl.
Now in a small bowl mix together the sour cream and mayonnaise.
Next put the sour cream and mayonnaise mixture in the bowl with all of the other ingredients and carefully combine. Sprinkle on salt and pepper to taste.
Finally for best flavor set in refrigerator for at least 4 hours or overnight and stir before serving, but you can eat this yummy salad immediately too!
Recipe can easily be doubled to serve a crowd.
