You will need:
9” round cake, any flavor
White and green buttercream icing
8 Lindt white chocolate truffles
Yellow jimmies sprinkles
Orange and pink round confetti sprinkles
Orange flower confetti sprinkles
Sliced almonds
Black and pink food coloring markers
Wilton #1M and #21 open star piping tips with piping bags
Pastel candy coated chocolate eggs
Pink and green pastel sugar icing flowers
Toothpick
Styrofoam block
Directions for Easter Truffle Cake:
First frost the round cake with white buttercream icing. Here’s my buttercream recipe.

Then pipe 8 rosettes using the green buttercream on top with the 1M piping tip. Next pipe around the bottom of the cake using the #21 piping tip and the green buttercream

Now unwrap a truffle and push a toothpick in the bottom of the truffle.

To make the chicks, melt the yellow candy coating wafers according to package instructions. Let cool for about 5 minutes so it doesn’t melt the truffles. Dip into the melted candy coating, tapping off the excess. Then place the toothpick in a Styrofoam block to dry.

Next, cut an orange round confetti sprinkle in half. Using a toothpick dipped in candy coating, attach the flat end of the sprinkle to the front middle of the yellow truffle for the beak.

Now attach 2 orange flower confetti sprinkles using a toothpick dipped in candy coating for the feet.

When the truffle is completely dry, make 2 dots for the eyes using the black edible marker.

Finally attach the yellow jimmies to the top of the head using melted candy coating.

For the bunny, unwrap a white truffle

Next, attach a pink round confetti sprinkle in the middle front of the truffle for the nose

Then, color the middle of 2 sliced almonds for the ear.

Attach the ears to the top of the white truffle with white buttercream

Then make 2 dots for the eyes using the black edible marker.

Finally, place the truffles on top of the cake and decorate with pastel candy coated chocolate eggs. Add some pink and green pastel sugar icing flowers to the side of the cake as well.
