During the Christmas holidays, one of our all time favorite cookies are the chocolate and marshmallow Church Window cookies! So for Easter I decided to put a spin on our favorite classic and make Easter Church Window Cookies bars with fruity marshmallows, coconut, white chocolate and macadamia nuts!

Traditional Church Window Cookies are rolled and sliced into circles. Sometimes these are called Cathedral Cookies or Stained glass cookies because they resemble church windows. What makes these so different from the original is that I subsituted the dark chocolate for white chocolate and the walnuts for macadamia nuts! I also opted to put them in a pan instead of roll them into a log and slice. Makes for a much easier and quicker cookie!

You’ll love how pretty these Easter Church Window Cookie bars look on your brunch or dinner table. They’ll soon become a family favorite too! With only 4 ingredients they only take just a few minutes to assemble!
You will need:

2 (12 oz) bags white chocolate chips
½ cup macadamia nuts, coarsely chopped
1 (10 oz.) bag colored fruity marshmallows
1/3 cup sweetened shredded coconut
8″ x 11″ or 8″ x 8″ baking dish
Directions for Easter Church Window Cookie Bars:
First coarsely chop the macadamia nuts

Then open the bag of marshmallows and put in a large bowl. Add the chopped nuts.

Next in a microwave safe bowl, melt the white chocolate chips in the microwave in 15 second intervals, stirring after each interval until chocolate is melted and smooth or melt over a double boiler on the stovetop over medium low heat.

Now cool the chocolate for a minute and then pour the melted chocolate over the marshmallows and macadamia nuts, stir quickly until just coated.

Pour the marshmallow mixture into a 8”x 11” or 8”x 8” baking dish lined with parchment paper.

Immediately sprinkle the coconut on top

Then cover with plastic wrap and place in the refrigerator for 2 hours or overnight to set
Lift the parchment paper out of the pan with the cookie mixture and slice into 1” rows.

Finally slice each row into 3 sections.

Easy Easter Church Window Cookie Bars with only 4 ingredients!
Ingredients
