Directions for Dole Whip Pie:
In a blender, add the frozen pineapple chunks and pineapple juice, blend until smoothie consistency. Take your time with this and stop your blender and mix the chunks around if necessary and repeat. I don’t have a very high powered blender but if you thaw your pineapple for just a bit it may help.
Next add the vanilla ice cream and blend together until everything is completely incorporated.
In a large bowl, add the pineapple mixture to the thawed Cool whip by folding everything together with a spatula.
Spoon the mixture into the prepared pie crust, cover with the plastic lid and freeze pie for 8 hours or overnight.
After the pie has frozen, decorate pie by piping thawed Cool Whip around the edges.
Next alternate the maraschino cherries and pineapple chunks around the Cool Whip
Place one regular size Nilla Wafer in the middle of the pie and 2 mini Nilla Wafers for ears to look like Mickey Mouse’s head.
Slice and enjoy! Freeze any leftover pie.
