This curry chicken and fruit salad is super simple to make, you can even use grocery store rotisserie chicken to make it even easier!
You will need:
½ cup chopped onion
1 ¼ tsp curry powder
2 TB butter
1/3 cup mayonnaise
½ tsp salt
Pinch cayenne pepper
16 oz. can chunk pineapple, drained
½ cup chopped pecans
½ cup green grapes, sliced in half vertically
1 red apple, diced
3 cups diced cooked chicken
Shredded coconut, optional
Butter lettuce, optional

First mix the onion with curry and sauté in butter for 3 to 5 minutes in a small frying pan. Cool completely.
Next, for the dressing, stir together the curry mixture, mayonnaise, cayenne pepper and salt and set aside.
Now combine the chicken, pineapple, grapes in apple into a large bowl.
Add dressing and toss lightly. Serve over butter lettuce and sprinkle with coconut if desired.
