You will need:
Costco Pumpkin Pie
8 ounce container of Cool Whip, thawed
Cinnamon Sugar
Store-bought mini Gingerbread men cookies (I found mine at Sprouts)
White cookie icing and red sprinkles (I used store bought Betty Crocker Cookie Icing)
Mini glass canning jars
Wilton 1M piping tip
Disposable piping bags
Red and white bakers twine (optional)

DIRECTIONS FOR COSTCO GINGERBREAD PUMPKIN PIE JARS
Simply scoop out the Costco pumpkin pie, crust and all and place into the jar, filling about ¾ of the way full.
Next pipe the Cool Whip on top.
Sprinkle the top with cinnamon sugar
Decorate the gingerbread men cookies with icing and sprinkles
Place on top of the Cool Whip
Tie a bow around the top of the jar with the bakers twine.

Just grab some more Cool Whip and you can easily double this recipe. Makes a great dessert for a crowd, for a party or potluck. - Costco Pumpkin Pie
- 8 ounce container of Cool Whip, thawed
