Super yummy Coffee Cupcakes, perfect for the coffee-lover in your life! These are so full of coffee flavor in both the cake and frosting, my coffee cupcakes are packed full of coffee goodness and super easy to make using a box cake mix!

You will need:
For cake:
- 1 (15.25 oz.) box white cake mix (I used Betty Crocker)
- 1 cup milk
- 3 eggs
- 2 Tablespoons espresso powder (see Amazon affiliate link below)
- 1/2 cup oil
- 1 teaspoon vanilla extract
For frosting:
- 2 (12 oz.) cans cream cheese frosting (I used Betty Crocker)
- 4 Tablespoons of boiling water
- 2 Tablespoons espresso powder
- 1/2 cup powdered sugar
Optional ** whipping cream and chocolate covered espresso beans

For the cake:
Using a spoon or fork, mix together the box cake mix and espresso powder. Next using a hand mixer, mix in the milk, eggs, oil and vanilla. Put cupcake liners in muffin tins and fill 2/3 with batter. Bake cupcakes at 350 degrees for 12-14 minutes or until toothpick stuck in middle comes out clean. Let cool completely.
For the frosting:
Dissolve the espresso powder in the boiling water. Scoop the frosting into a large bowl, add the espresso and powdered sugar. Beat with hand mixer until well combined and frost cupcakes. Top with whipping cream and a chocolate covered espresso bean if desired.
