YOU WILL NEED:
3 cups flour
1 Tb baking powder
2 eggs
1 cup granulated sugar
1/4 cup brown sugar
1 1/2 tsp vanilla
1/4 cup butter, melted
1 cup evaporated milk
1 1/2 cup blueberries
1/4 cup canola oil
1 tsp lemon zest
A (21 oz.) can blueberry pie filling
1 small heart cookie cutter

DIRECTIONS
First, pre-heat oven to 450 degrees and grease muffin pans with cooking spray. Be sure to spray the top of the pans so muffin tops won’t stick.
Next, combine flour and baking powder in a large bowl.
In another mixing bowl, beat eggs, sugars, vanilla, oil, and butter. Add evaporated milk and mix until incorporated. Stir in the flour mixture, do not overmix.
Now, fold in blueberries and lemon zest. Spoon batter into muffin cups and fill all the way to the top.
REDUCE heat 350 degrees and bake 20-30 minutes or until toothpick stuck in the center comes out clean. (Pre-heating to 450 degrees and reducing to 350 degrees will create the perfect muffin dome).
Let cool completely.
Next, slice the top off the muffin and cut out a heart shape. Spread a thin layer of blueberry pie filling onto the cut portion of the bottom layer.
Finally, place the top of the muffin on the blueberry pie filling and spoon more pie filling into the center of the heart.
