This is the Best Watergate Salad! I got this recipe from my friend Melissa years ago, and she said her mother-in-law and aunt used to make it all the time! It’s such a classic vintage recipe that everyone loves, and you’ll love how quick and easy it is to make! It takes only 5 minutes using just 4 ingredients!

This “salad” can easily pass as a dessert. It’s so light and refreshing – truly a retro classic! Top with more Cool Whip and a maraschino cherry if desired, this makes a great side for you Christmas holiday dinner or a fun treat for St. Patrick’s Day!
You will need:
2- (3.4 oz.) boxes of instant pistachio pudding, dry
20 oz. can crushed pineapple (undrained)
8 oz. Cool Whip, thawed
Directions for Best Watergate Salad:
First place the 2 boxes (dry) of instant pistachio pudding and the undrained can of crushed pineapple in a large bowl.
Then stir the dry pudding and pineapple together with a spoon until well mixed.
Next add the marshmallows and thawed Cool whip in the bowl
Finally fold the marshmallows and Cool whip in with the pistachio pineapple mixture until thoroughly combined.
You can even add 1/4 cup of chopped pecans if you want!
Now you have the best Watergate Salad! Serve it in a large bowl for a crowd – this makes a great side dish for Easter brunch, or place in individual dessert dishes. Garnish with chopped pistachios, pecans, more Cool Whip and a cherry if desired.
